About the Recipe
This is my all time favorite simple cheesecake recipe I've done a few times.
Ingredients
Crust:
8 Whole Honey Graham Crackers Smashed
2 TBS brown sugar
1/4 cup melted butter
Filling: (room temperature)
16 ounce cream cheese
1/2 cup dairy sour cream
1/3 cups sugar (stevia works too)
2 slightly beaten Eggs
1 TBS lemon juice
(Optional fruit topping - Raspberries, Cut Strawberries, Whipped Cream)
Optional Home Made Whipped Cream to Decorate
up of Heavy whipping cream, 1& 1/2 tsp vanilla extract, 2& 1/2 TBS powdered sugar) whisked on high speed for 2-3 minutes. We put in a ziploc, snipped corner, and then decorated
Preparation
Preheat Oven to 325
For crust, in a medium bowl combine graham cracker crumbles and 2 TBS brown sugar. Gradually add butter until all pieces are evenly coated. Press onto bottom and sides of 9” pie plate. Set aside
For filling, in a large bowl beat cheese until smooth, beat in sour cream, sugar, eggs, and lemon juice. Pour mixture into crust. Bake 30-35 minutes. Cool completely. Store in fridge. Top how you’d like and serve!
Cut into 8 slices or however many you'd like!
Some VARIATIONS I’ve tried:
I’ve done this cheesecake recipe a total of 3 times. I’ve also been able to modify it with stevia either by cutting the sugar in half or completely substituting for stevia. It still turned out delicious! I did prefer the half and half ratio and felt good about how I cut the sugar in half!
As for the crust, I’ve also just done plain crushed graham crackers with no butter or maple sugar and it turned out tasty just very crumbly since the butter helps stick!
I’ve also used the store bought crust when I was making a couple pies for a party and that was yummy too!
