Delicious Banana Bread (Stevia Sweetened)

About the Recipe

Love this banana bread recipe so much! I try to sweeten with organic stevia rather than sugar and use very ripe bananas. JJ, Thomas, and I all seem to love this one especially as a snack or for breakfast. I do try to mainly sweeten it this way but if desired you can play around with a sugar to stevia ratio or even try out Stevia and a little honey or maple syrup!

Ingredients

2 Cups Whole Grain Wheat Flour (regular works too)

1 Tsp Baking Powder

1 Tsp Baking soda 

1 Tsp Salt

1 Cup Organic Stevia (you can use sugar or do 3/4th stevia and 1/4th sugar and it tastes really good in my opinion)

2 Eggs

1 tsp Vanilla

1.5 tsp Cinnamon

1/2 Cup Oil (vegetable or I enjoy coconut oil)

4 Medium very ripe bananas (mashed)


Optional (1/2 cup chopped walnuts)

Preparation

Step 1. Heat oven to 350 degrees F if using a metal or silicone pan. 325 should work for glass. Grease bread pans if needed.


Step 2. In a medium bowl, combine flour, baking power, baking soda, and salt together and mix.


Step 3. In a large bowl combine stevia and eggs first. Then add in the vanilla, oil, bananas, and cinnamon. Mix well but no need to over mix.


Step 4. Add the dry ingredients to the wet ingredient large bowl and mix just until combined. Add optional walnuts in at this time if desired. Pour into the 2 bread pans.


Step 5. Bake for 40-45 minutes or until a toothpick/fork comes out clean. I usually check at 40 minutes and they are done if I used smaller bread pans, bigger bread pans take longer.
